- 4 small or 2 large chicken breasts
- 3/4 cup dry white wine
- 2 tablespoons lemon juice
- 4 tablespoons butter
- 2 tablespoons capers
- Chopped parsley, optional
Step1- Firstly slightly pound out the chicken breasts with salt and pepper.
Step2 –Take a large sauté pan, heat up 2 tablespoons butter over medium-high heat. When the butter has melted, add chicken breasts, and cook it until golden brown on both sides, around 2 minutes per side.
Step3-And then remove the chicken from pan and transfer it to a plate.
Step 4- Add in white wine, scraping up brown bits from the bottom on medium heat. Boil until reduced by half, Add lemon juice and cook another minute.
Step5- Place remaining butter, and mix it into the sauce and then chicken back into the sauce, boil it for 1-2 minutes. Top with capers and then garnish with parsley.
